MICROGREENS
Nutrient dense and delicious.
Microgreen is the universal name for almost any green vegetable or herb that has edible leaves and is harvested at the cotyledon growth stage, when the first set of true leaves sprout. This stage happens after germination and sprouting but before a plant fully develops its root and leaf structures. This process means that the microgreen will taste exactly like a concentrated version of the original vegetable.
Microgreens are grown with soil, undergo photosynthesis, and therefore absorb both nutrients and minerals from the soil as they grow, greatly increasing their nutritional and fiber content. The exact nutritional composition of each microgreen depends greatly on the type of microgreen you eat: leafy greens have higher levels of beta-carotene, iron, and calcium while dark green leafy vegetables will be high in lutein and zeaxanthin.
Microgreens can be used in anything from your morning smoothies, to garnishing meals or a replacement for lettuce in any sandwiches.
